After harvesting, it's cured in the sun where it changes from red to black and develops its characteristic flavor profile or raisin, espresso, chocolate, and dried fruit. It is then stone ground into flakes with a little bit of sea salt and oil. May we suggest using it on kebabs, chicken, beef, lamb, hummus, brownies, pasta, roasted vegetables, or eggs.
