We are quite partial to our DLM parmagiano-regiano from Italy. We have visited the farm and petted the cows. We also love some of our pecorinos from Southern Italy. Think Caccio Pepe and alfredo sauces, but you will find yourself wanting to nibble and nosh and grate these cheeses over everything.
