Cast Iron Peach Cobbler

Adapted from Fine Cooking Magazine, this recipe is buttery and rich with sweet slices of juicy peaches. 

INGREDIENTS

  • 8 Tbsp unsalted butter, cut into 8 pieces
  • 1 cup unbleached all-purpose flour
  • 1 cup granulated sugar
  • tsp baking powder
  • Pinch of kosher salt
  • 1 cup whole milk
  • 3 cups peeled and sliced peaches (about 4 to 6 peaches)
  • DLM Madagascar Vanilla Gelato for serving

INSTRUCTIONS

Position a rack in the center of the oven and heat the oven to 375˚F. Put the butter in a 10- to 12-inch cast iron skillet and put it in the oven to melt the butter while the oven is heating.

Meanwhile, stir or whisk the flour, sugar, baking powder, and salt in a medium bowl until well combined. Add the milk and stir or whisk until combined; a few small lumps are okay.

When the butter is fully melted, take the baking dish out of the oven and pour the batter over the melted butter; do not mix.

Scatter the peaches over the batter, favoring the middle of the dish more than the edges; do not mix them in.

Bake until the top is a rich golden-brown, 30-45 minutes. Serve warm with a scoop of DLM Madagascar Vanilla Gelato.

If I have a No. 8 cast iron frying pan, instead of a 10 inch cast iron pan, would a 10 stainless steel pan require more or less oven time, without burning the cobbler?

Hello Barbara! We recommend using plenty of butter to help oil the pan and baking towards to the lower end of the cooking time range, keeping an eye on it to make sure it doesn't overcook.
