An artisanal cheese from the Trentino region in northern Italy. This soft cheese is aged for over 60 days in the cellars of Rifugio Crucolo, at the entrance of Val Campelle, Trento. This unique environment gives the cheese its particular taste and rich aroma. Mild enough for children to enjoy, yet complex enough to keep the adults interested. We have visited this cheese maker and it's dear to our heart, we are very proud to share it with you.
