It is complex similar to Gruyere and Comte. it adds depth of flavor to your dishes and melts beautifully in a grilled cheese, mac and cheese and strata. At room temperature, it is firm and dense. Goes well with Barolo, Barbaresco, Spanna, and Gattinara wines.
