Road Trip! Our Food Explorer Adventure continues, taking us to one of our favorite regions: New England. In honor of the great specialty foods that come from this region, we have compiled a few of our favorite things. Please enjoy the journey:Cabot Cloth Bound Cheddar: This cheese is the revolutionary result of collaboration between two cheese icons: Cabot Creamery and Jasper Hill Cellars. After it comes to the Cellars, the young cheese is coated in lard and an additional layer of cloth. The cheeses ripen in a specially calibrated vault in Jasper Hill Cellars, where they are constantly brushed, turned, and monitored for quality. Clothbound is an approachable but complex natural-rind, bandaged cheddar with a crumbly texture and nutty aroma. The flavor is deeply savory and slightly tangy with caramel sweetness to the finish. Jasper Hill Bayley Hazen Blue Cheese: A Jasper Hill Farm original, and is made from high-quality whole raw milk. It is named for an old military road commissioned by George Washington during the Revolutionary War. Bayley has developed a loyal following because of its fudge-like texture, toasted-nut sweetness, and anise spice character. The paste is dense and creamy, with well-distributed blue veins. The usual peppery character of blue cheese is subdued, giving way to the grassy, nutty flavors in the milk. Vermont Creamery Coupole: Coupole is an aged goats' milk cheese with a wrinkly edible rind and bright, fresh cheese taste. Coupole’s allure is attributable to the intriguing contrast between the strong ripened flavor of the rind and the delicate fresh taste of its interior.
